Known for its world-class wineries, natural hot springs, and deep-rooted history, the town strikes a balance between rustic beauty and modern elegance. Weekend Itinitary to Paso Robles

Day 1 – Drive to Paso Robles and Visit the Light at Sensorio

Drive up from San Francisco or Los Angeles and aim to arrive in Paso Robles just before sunset – so you can catch the best twilight views while checking into your accommodation. Unpack and grab a jacket before heading out to one of the mesmerizing places in Paso Robles.

Visit the Bruce Munro – Light at Sensorio

Get ready to be dazzled—Light at Sensorio in Paso Robles is a breathtaking outdoor art installation that immerses you in a captivating world of color and light. Created by acclaimed artist Bruce Munro, this stunning exhibit features thousands of glowing orbs spread across 15 acres of rolling hills, illuminating the landscape in waves of vibrant blues, purples, and golds. As dusk settles in, the lights begin to twinkle against the darkening sky, transforming the area into a magical, otherworldly scene. Trust me, it’s an unforgettable experience that beautifully showcases the harmony of art and nature.

Beyond the “Field of Light,” Sensorio’s “Light Towers” add another layer of enchantment. Constructed from over 17,000 illuminated wine bottles, the towers shift in color and celebrate the rich winemaking tradition of the region. As you wander through this field of lights landscape, you’ll be drawn into a peaceful, dreamlike world.

After experiencing the magic of Light at Sensorio, head to downtown Paso Robles for a leisurely stroll through its charming streets. Here, you’ll find an array of delightful restaurants and lively bars, offering the perfect setting for a romantic evening filled with culinary delights and relaxed exploration. 

Dinner at Fish Gaucho

When in Paso robles, you have to dine at Fish Gaucho, a lively Mexican restaurant in downtown famous for its fresh, coastal-inspired dishes and vibrant atmosphere. They speicalize in Baja California cuisine, the menu has flavorful options like grilled fish tacos, ceviche, and tender carnitas, all crafted with locally sourced ingredients. Pair your meal with one of their top-notch tequila cocktails or a refreshing margarita, making it the perfect spot for a fun, flavorful evening.

After dinner, head to The Alchemists’ Garden for a nightcap. This trendy spot offers a cozy, vintage ambiance and a menu filled with creative, handcrafted cocktails made with fresh, local ingredients. It’s the ideal place to savor a craft drink and soak in the relaxed, stylish vibe of Paso Robles’ nightlife.

Day 2 – Relax at a Hot Spring and Visit a Winery

The countryside invites a slower pace of life, and we embraced it during our stay at Allegretto Vineyard Resort. We started our day with a peaceful walk through the resort’s lush vineyards and olive gardens, soaking in the serene beauty of the landscape. You can also unwind by the pool, pamper yourself with a luxurious spa treatment, or enjoy a calming yoga session in the tranquil courtyard.

Relax at a Hot Spring

Unwind with a soak at the River Oaks Hot Springs Spa. Enjoy the peaceful countryside while you relax in the mineral-rich hot springs.

After the hot spirng, we came back to the resort for a quick change of clothes and had lunch at – Cello Ristorante & Bar

This farm-to-table restaurant offers a Mediterranean-inspired menu, featuring fresh, locally sourced ingredients. You can taste some of the seasonal dishes that highlight the flavors of California’s Central Coast, paired with exceptional wines from the resort’s own vineyard and the Paso Robles region. I highly recommend to dine outdoors in thier patio overlooking the lush gardens for a relaxing dining experience.

Visit a Winery

Head out to Halter Ranch Vineyard or DAOU Vineyards to enjoy stunning sunset views and wine tasting. Both offer exceptional wines with beautiful settings.

We absolutely fell in love with DAOU Vineyards, which offers not only exceptional wines but also an unforgettable tasting experience atop the scenic Adelaida Mountains. Known for its bold and elegant Bordeaux-style wines, DAOU’s portfolio includes some of the finest Cabernet Sauvignons and Chardonnays in the region. Their flagship wines, Soul of a Lion and Reserve Chardonnay, were among the best we’ve ever tasted.

The tasting room at DAOU is a luxurious yet welcoming space, surrounded by beautifully manicured gardens overlooking the rolling hills and valleys. You can savor your wine on the patio, where sweeping views of the Paso Robles countryside create a stunning backdrop. The elevated location offers some of the best views in the area, especially at sunset when the sky is awash with warm colors that perfectly complements the beauty of the vineyards. With a glass of delicious wine in hand and the sun dipping below the horizon, it’s hard to imagine a more perfect setting.

Dinner at Basil Thai Resturant

This spot is one of the local’s favorite and I cannot recommend it enough. Their menu offers a delicious variety of traditional Thai dishes, from fragrant curries to flavorful stir-fries, all made with fresh ingredients and bold spices. Popular options include the Pad Thai, Spicy Fried Rice, and Green Curry, perfect for satisfying your cravings for something both savory and exotic.

Day 3 – Road trip to Hearst Castle and Morro Bay

Tour the Hearst Castle

Take a small road trip to San Simeon to explore the iconic Hearst Castle, a true California landmark that embodies the grandeur and opulence envisioned by media magnate William Randolph Hearst. This magnificent estate showcases lavish rooms such as the Grand Ballroom, the Assembly Room, and the Roman Pool, each adorned with priceless art and antiques sourced from around the globe.

During your tour of the estate, the stunning Neptune Pool is a must-see. Framed by elegant colonnades and boasting breathtaking ocean views, it stands as a true highlight of Hearst Castle. With its unique blend of Mediterranean Revival and Spanish architectural influences, every corner of Hearst Castle is a visual delight.

To explore Hearst Castle, guided tours are available daily, offering an in-depth look at the estate’s history and luxurious interiors. Tours typically last around 90 minutes, and tickets can be purchased online or at the visitor center. Prices range from $30 to $50 per person, depending on the tour type, with options to visit different parts of the castle or focus on special features like the gardens or the art collection.

Lunch at Beachfront Restaurant

After touring the property, drive to Morro Bay, where you can grab lunch at one of the beachfront restaurants. Enjoy fresh seafood at The Galley Seafood Grill & Bar, known for its stunning views and delicious dishes like fish tacos and clam chowder. Another great option is Windows on the Water, where you can savor locally sourced cuisine while gazing out at the bay and iconic Morro Rock. If you’re in the mood for a casual vibe, Taco Temple is a must-visit for its mouthwatering tacos and laid-back atmosphere.

After lunch, take some time to explore the charming waterfront and enjoy the scenic beauty of this coastal town.

Kayak in Morro Bay and Enjoy the Sunset

Morro Bay is a picturesque coastal town known for its stunning natural beauty and laid-back vibe. Its most iconic feature is Morro Rock, a towering volcanic plug that stands guard at the entrance of the bay. In my opinion, sunset is the best time to visit the rock, as the fading light creates dramatic effects that highlight its grandeur.

You can a walk along the waterfront and spot sea otters, seals, and coastal birds, or if you are feeling adventurous, rent a kayak or paddleboard to explore the bay and its wildlife up close.

Dinner at Il Cortile Ristorante

Make your way back to Paso Robles for a romantic dinner at Il Cortile Ristorante, a culinary gem renowned for its authentic Italian cuisine and inviting atmosphere. Their menu features house-made pasta, fresh seafood, and seasonal ingredients, with each dish expertly crafted to showcase the rich flavors of Italy. Complementing the exquisite food is an extensive wine list that highlights local Paso Robles selections, perfectly paired with your meal. Dining at Il Cortile promises a memorable experience that transports you to Italy with every delightful bite.
